In this chapter we analyse the social construction of illegality along three main axis: entrepreneurial, institutional and spatial. Specific case studies from the Italian agrofood business show the existence of various typologies of legal and illegal practices which at times overlap with organize crime. The latter offer the opportunity to further speculate on the existence of a mechanism of institutional selection thanks to which people perceive illegality and not legality as the “norm”. In such a case illegality becomes institutionalized.
