This paper describes the principal characteristics of the extra-virgin olive oil “Colline Pontine” for which has been put forward a request of Protected Designation of Origin (PDO) recognition. The principal aim of the PDO is to make this oil easier to recognize, and thus valorize it, so as to be distinguishable from oils that are produced outside its production area, as its low price level would make it easy to be assimilated to other cheap oils.
