In the present study, 11 types of mineral contents and physical-chemical parameters indicating the quality of honeys were determined for 30 honey samples from Lazio, Spain and Romania. The characterization of the three types of honeys was carried out based on their quality parameters (pH, sugar content and humidity) and mineral contents (Ca, Cd, Cr, Cu, Fe, K, Mn, Na, Ni and Pb). The analyses provided chemical descriptions, which were used for pattern recognition procedures; classification models were successfully validated by the one-third leave out method and the classification of approximately 100% of the honeys was achieved. The predictive ability of the models that were developed was 95%, as determined by the test method.
